The pork shares the pan with our delicious home-made multigrain springtime stuffing that contains celery, onions, carrots, dried apricots, dried cranberries and pears. It bakes up golden brown, moist and delicious. Clean up is a cinch.  We recommend that you serve it with a green veggie and some cranberry sauce (warm it for a nice drizzle over the pork).   Cook Time: 30-40 mins

• p><p>Thaw completely in refrigerator.</p>
  <p>Preheat oven to 400 F. Remove lid from pan. Place the aluminum pan on a cookie sheet for support. Sprinkling or mixing in a variety of dried fruits or pecans/walnuts is a nice touch. Roast pork for 40-45 minutes (full size) or 30-35 mins (half size), until internal temperature reaches 155F. Monitor throughout the cooking, and if stuffing gets dark, cover the pan with aluminum foil. Remove from oven and let meat rest for 10 minutes before slicing. Serve with a salad or veggie. Cranberry sauce is a nice addition, you can even put it on top of the pork. </p>
