Sorì Tildìn 2021 opent met een levendig parfum van rode kers, framboos, viooltjes en natte steen, aangevuld met fijne kruiden en een elegante mineraliteit.

De smaak is uiterst verfijnd: zijdeachtige tannines, zuivere zuren en een indrukwekkende spanning die de energie van dit cru-terroir prachtig weerspiegelt. De afdronk is lang, subtiel kruidig en zeer precies.

Vinificatie.
De druiven worden met de hand geoogst en zacht ontsteeld. Een korte koude inweking gaat vooraf aan de alcoholische gisting, die gebeurt in temperatuurgestuurde roestvrijstalen cuves. Tijdens de fermentatie worden delicate pigeages en overpompingen uitgevoerd om finesse te bewaren. De wijn rijpt ongeveer 12 maanden in barriques, gevolgd door ongeveer 12 maanden in grote vaten, en sluit af met een flesrijping van enkele maanden.

Het domein.
Sorì Tildìn komt van een historisch perceel dat al generaties lang in handen van de familie Gaja is. De zuidelijke expositie zorgt voor optimaal rijpende Nebbiolo met grote finesse.
Het domein werkt met minimale interventie, natuurlijke begroeiing, respect voor bodemleven en volledige afwezigheid van synthetische middelen. De focus ligt op het behoud van biodiversiteit, natuurlijke balans en de zuiverste expressie van Nebbiolo.
