Hij is opgegroeid in Frankrijk en woont nu in Amsterdam met zijn Franse vrouw en dochter. Toen hij na de Hoge Hotelschool weer naar Frankrijk verhuisde, kwam hij dagelijks in contact met de verfijnde Franse pâtisserie. Hij raakte direct gefascineerd door deze mooie strakke taarten en gebakjes en door de manier waarop de grote pâtissiers daar het banketbakken weten te moderniseren en trendy weten te maken.

In Gwenn's Bakery passeren alle Franse klassiekers de revue. Soms op traditionele wijze, maar veel vaker geeft Danis een moderne frisse twist aan eclairs, friandises, tartelettes en nog veel meer lekkers. Want als Robèrt en Janny het altijd over één ding eens waren, dan was het wel de heerlijke smaakcombinaties die Gwenn hen voorschotelde. Naast vele basisrecepten geeft hij per recept tips en trucs.
