This 2022 Caol Ila is currently maturing in refill bourbon barrels. As these casks are only three years old, there is an opportunity to re-rack early and benefit from a longer term finish to shape a more premium final release. First-fill bourbon for amplified vanilla, coconut and honeyed sweetness; Sherry (PX/Oloroso) for darker colour, dates, fig and nutty richness; or select wine casks (Port, Madeira, quality red) for a more fruity and unique flavour profile.

We bottled a 12 year old Caol Ila, finished in a Ruby Port cask, under Glaschu Spirits Co. It was a beautiful combination of the classic Caol Ila character and the fruity profile of Ruby Port. The colour was phenomenal too, like Coca Cola. All in all a very successful bottling for us, so it's a spirit we're very fond of.
