These are then hooked by the head, thus preventing the product from being bruised and the raw material from being damaged as happens with other fishing methods. This sardine is offered at the fish market early in the morning and that same day the product is tinned. These sardines are cleaned and gutted manually and steam roasted to achieve the desired texture. They are packed one by one and covered with extra virgin olive oil until overflowing.
These sardines are undoubtedly one of the jewels of the La Brujula lineup.
