It is made by the monks at Benedictine Abbey in Saint Benoit du Lac, the only cheese producing Abbey in North America. The cheese has a natural rind and is soft and creamy with earthy, mushroomy aromas and salty, sharp flavour. This cheese is naturally lactose free.
