This natural process Red Catuai from Minas Gerais offers a comforting, sweet-forward profile. The processing highlights a pronounced sweetness reminiscent of a chocolate donut, providing a soft, pastry-like quality to the cup. Acidity remains very mellow and integrated, allowing the subtle notes of raspberry to sit gently in the background. It is a structured and reliable coffee with a straightforward complexity that feels honest and accessible. As an omni-roast, it provides a deep, cocoa-heavy base for espresso or a rounded, fruit-accented filter brew.

About the producer: Casa Almeida is a key contributor to the Neighbours Project in Minas Gerais, Brazil. This initiative focuses on supporting small-scale producers like Jorge Barreto by providing access to technical resources and quality-focused infrastructure. By working collaboratively, these farms can refine their processing techniques and reach the specialty market more effectively. The project emphasizes community-driven quality, ensuring consistent lots that showcase the regional characteristics.

About the varietal: Red Catuai is a highly productive dwarf variety resulting from a cross between Mundo Novo and Caturra. It is widely cultivated across Brazil due to its resilience and the compact size of the trees, which facilitates harvesting. In the cup, Red Catuai is valued for its ability to deliver a heavy body and significant sweetness. When processed naturally, it often develops a very clean, chocolate-driven profile with subtle red fruit characteristics.

About the process: The Natural (Dry) process for coffee involves drying whole cherries to let the beans absorb fruit flavours. Ripe cherries are handpicked and sorted, then spread out to dry in the sun for two to four weeks. During this time, they are turned regularly to ensure even drying and prevent mold. Once dried, the outer layers are removed, revealing the green beans inside. This method produces coffee with fruity, sweet notes and a fuller body. However, it requires careful management and is best suited for regions with dry climates.

Not worth the paper it’s printed on.
Format: Paperback
I can’t say that I was expecting such a slim volume on 10,000 years of Chinese culture to be a work of rigorous scholarship, but I also wasn’t expecting it to be quite *this* dreadful. It is badly written to the point of being unreadable, and it is clear that no one thought to edit the document before publication. I made it about twenty pages in before I had to put it down. The entire thing reads like an Anthropology 101 term paper written by a first semester college freshman who hasn’t quite figured out how to back up claims with evidence yet.

It all makes sense now
Format: Kindle
This book covers Ancient Chinese History, Starting from the Settlement at the Yellow River through the Xia, Shang, Zhou, and Qin Dynasties to the Han Dynasty. This should ring a bell for some folks as this is the period around the Yellow River shows the early development of man in this region. Ancient Chinese history is a tapestry of remarkable achievements, cultural developments, and political transitions that unfolded over thousands of years. It all began with the settlement at the Yellow River, where early agricultural communities emerged around 5000 BCE. This period witnessed the gradual transition from a hunter-gatherer lifestyle to settled farming communities, marking the foundation of Chinese civilization. From this fertile ground, the Xia Dynasty rose in the 21st century BCE, establishing the first recorded dynasty in Chinese history. Although little written evidence remains, the Xia period laid the groundwork for future dynasties, fostering advancements in agriculture, irrigation systems, and early forms of government. The subsequent Shang Dynasty (16th–11th century BCE) witnessed great cultural achievements, including the development of a complex writing system and the creation of magnificent bronze artworks. It was during this era that the concept of the Mandate of Heaven emerged, which stated that rulers' legitimacy depended on their ability to govern effectively. Following the fall of the Shang Dynasty, the Zhou Dynasty (1046–256 BCE) emerged and introduced the feudal system, characterized by a decentralized government. This era saw the flourishing of philosophy, with notable thinkers like Confucius and Laozi influencing Chinese thought for centuries to come. The Qin Dynasty (221–206 BCE) unified China under the rule of Emperor Qin Shi Huang, bringing about remarkable political and administrative reforms. It standardized currency, measurements, and writing systems, and constructed the Great Wall of China. Although short-lived, the Qin Dynasty paved the way for the subsequent Han Dynasty. The Han Dynasty (206 BCE–220 CE) was a period of significant cultural and technological advancements. It expanded the empire's territorial reach, established the Silk Road, and embraced Confucianism as the official ideology. The Han Dynasty left a lasting legacy, shaping the Chinese state and society for centuries. Through these pivotal dynasties, Ancient Chinese history witnessed the development of a rich and enduring civilization, with contributions that continue to influence the world today.
