Unser Speck Riserva ist ein Meisterstück südtiroler Handwerkskunst – für alle, die Wert auf Herkunft, Qualität und Geschmack legen.
Hergestellt aus Fleisch einer besonderen italienischen Schweinerasse, die fast doppelt so groß ist wie herkömmliche Hausschweine, überzeugt er durch feine Marmorierung, kräftiges Aroma und zarten Biss. Die Tiere wachsen langsam und liefern so eine Qualität, die man schmeckt.

Mindestens 12 Monate reift jede Hamme in unserem Lager in Töll bei konstantem Klima. Während dieser Zeit verliert sie langsam Feuchtigkeit, wird regelmäßig gepflegt und entwickelt dabei ihr unverwechselbares, fein-würziges Aroma.

Gewürzt wird traditionell von Hand mit Naturgewürzen und Meersalz, anschließend leicht kalt geräuchert über Buchenholz und Wacholder.

Reifezeit: ca. 12 Monate

Durch die handwerkliche Herstellung können gelieferte Stücke minimal in Form und Gewicht variieren – das Mindestgewicht wird jedoch stets erreicht.
