Die Trauben kommen aus einer 3,5 Hektar großen, südwestlich orientierten Parzelle mit lehmigem Kalkboden. Die Rebstöcke sind 40 Jahre alt und werden nach den Prinzipien der Biodynamie bewirtschaftet. Das Weingut selbst ist Demeter-zertifiziert. Nach der manuellen Ernte werden die unentrappten Trauben einmalig mit 20 bis 40 mg geschwefelt und dann mit einer traditionellen vertikalen Coquard Presse gepresst. Die Gärung und der Ausbau finden ohne Zusatz von Hefen in 228 und 400 Liter Holzfässern statt. Der Wein bleibt für acht bis zehn Monate im Fass und durchläuft eine malolaktische Gärung. Ein Abstich erfolgt nach Bedarf und der Wein wird unfiltriert und ohne Dosage abgefüllt. Die jährliche Produktion liegt bei 10.000 bis 15.000 Flaschen.
